NuovoYork
New York pizza, engineered. Dough cold-fermented for 72 hours, sauce held between pH 4.2 and 4.6, everything finished in a 550°F deck oven. Slices till 3am. Till 4:30 on weekends.
02 // The lab
Made by a chemical engineer
Atalay is a chemical engineer who decided the New York slice was a process worth controlling. Years of adjusting how the cheese melts and how sharp the sauce runs went into a pie that eats rich and still lands light.
The tomatoes, the olive oil and the cheese come from Italy. The dough rests cold for three days before it sees the oven. The sauce gets measured, not eyeballed.
None of that shows up on the plate as anything but a better slice. That is the point.
03 // After dark
Pop-up DJ nights
Some nights the lights go down and a DJ sets up in the shop. The ovens keep running. Walk in, grab a slice, stay for the set.
